How to cook soup from a duck? This dish is suitable for both broiler and rustic bird. Remember only that broiler ducks meat is much softer, more tender, like chicken, and soup is prepared much faster. But the village birds are slightly larger, more fatty, with a yellowish shade of skin. Soups and broths from domestic ducks are more rich and aromatic. If you bought a duck in the store, before cooking properly, defrost it, then thoroughly rinsed, gutted and cut into small portions. Then lay the pieces of meat in a saucepan, pour cold boiled water and put on medium heat. As soon as the broth boils, gently remove the foam, add salt to taste, cover the pan with a lid and weak it all for 40 minutes over low heat.

In the meantime, we will prepare homemade noodles with you: on a clean table we pour flour on the hill, we make in it a groove on top and pour an egg into it. Further, pouring a little cold water, knead a steep, homogeneous dough. Now roll it out rolling in a thin layer, sprinkle a little flour and cut into strips about 5 centimeters wide. Then strip the dough into several rows and finely chop along. As a result, you should get thin home-made noodles .

Potatoes and carrots are good for mine, clean, cut into cubes and add to the duck broth.
