Duck stuffed with buckwheat

Duck meat is quite fat, the food from it turns out to be quite heavy. That's why one of the best ways of making ducks is stuffing with various fillings from cereals and vegetables and then baking in the oven. Fat in the process of baking turns into the filling, which makes the dish particularly juicy. There is an opinion that a duck stuffed with apples and buckwheat is quite an interesting dish, but experts advise cooking either carcass of a bird with apples (and better a goose) or stuffing it with buckwheat. A well-cooked ruddy duck, stuffed with buckwheat, is a dish that is quite suitable for a festive table.


How to cook stuffed duck?

Of course, the bird must be gutted and well washed with cold water.

Prepare the filling. We shall weld loose crumbs (the ratio of cereals and water is 2: 3). We add salt to the water. We first pick the duck (gutted, of course). Prepare the marinade: mix the lemon juice, a little sunflower oil, chopped garlic, red and black pepper, nutmeg, salt. Let's carve the carcass with the marinade inside and out. Let's leave the bird in marinade for 4 hours.

Immediately before filling, we prepare the filling. Cut the peeled onion finely and let it pass in a frying pan with a small amount of vegetable oil. Peeled carrots cut into strips and add it to the frying pan after the onion slightly blushes. Pass the onion and carrots for another 5-8 minutes. Add the slurry to the buckwheat and mix. Duck let it drain. Ready-made filling fill the tuskuptitsy. Sew it with simple white thread (No. 10 or 20).

We bake a duck, stuffed with buckwheat, in the sleeve. We place the carcass in the sleeve, pack it and put it on a baking tray. Cooking for 40-50 minutes at a temperature of 200-220 ° C, then remove the carcass from the sleeve and brown it on the grill (minimum 20 minutes), which we place above the baking tray. Readiness is checked by piercing the skin of a duck with a fork: if the juice that is allocated does not have a pink hue, then the bird is ready.

A ready-made duck stuffed with buckwheat is served with herbs, spicy sweet and sour sauces and table wine. If you want to make a duck stuffed with buckwheat and mushrooms, you need to add the mushrooms cut and separately saved in vegetable oil to the buckwheat and onion-carrot stuffing. It is better to take white, field mushrooms or oyster mushrooms, however, pads or boletus, grown in good ecological conditions, will also work.
