Like any traditional dish, the volume of Yam has experienced many variations and is prepared in its own way in each of the Thai families. We decided to stop at the most delicious soup recipes in the home, and devote them a separate material.
Thai soup recipes with shrimps
The classic volume of the pits combines a wide variety of spices, but we want to start with a basic recipe that is not so exotic with exotic ingredients, but retains that unique taste even when it is generally available.
Ingredients:
- hot chili - 3 pcs .;
- twigs of cilantro - 5 pcs .;
- fish sauce - 35 ml;
- mushrooms (oyster mushrooms) - 5 pcs .;
- leaves of lime kaffir - 3 pcs .;
- large shrimps - 4-6 pieces;
- lemongrass - 1 piece;
- lime - 1 piece;
- water 1.1 liters.
Preparation
Before you prepare the soup for the pits, take hold of the shrimp. Clean each of the shrimps from the shell, and then remove the "vein" along the entire back of the crustacean. Cut the lemongrass in large pieces and lightly beat off the flat side of the knife to release the maximum flavor. Put lemongrass in water and cook for 5 minutes.
At the bottom of the plates in which you plan to serve the soup, pour the fish sauce and lime juice. Then put a few slices of hot pepper.
Remove the stems of kaffir lime, and put the leaf itself to the lemongrass. Then send the chopped mushrooms, wait for a second boil and put the shrimp tails. Turn off the fire immediately, so as not to digest the shrimp tails. Catch lemongrass and lime leaves, and then spill the soup on plates and serve with greens of coriander.
Thai soup tom tom - recipe
Ingredients:
- chicken broth - 680 ml;
- galangal - 5 slices;
- stems of coriander - 6 pcs .;
- leaves of lime kaffir - 3 pcs .;
- large shrimps - 6 pcs .;
- fish sauce - 45 ml;
- the stalk of lemograss;
- hot chilli - 1 pc .;
- lime juice - 55 ml.
Preparation
After waiting for the broth to boil, put into it a sliced stalk of lemongrass, pieces of galangal and leaves of kaffir lime. Cook the aromatic broth for about 5 minutes, then put the peeled shrimp tails, hot pepper, pour fish sauce and lime juice. When the liquid starts boiling again, remove the soup from the fire and adjust the taste, adding more citrus juice or fish sauce as desired.
Serve the Yam immediately after the completion of cooking, if desired, sprinkling with celery greens.
The recipe for soup with pork and chicken
Significantly facilitate the preparation process called a ready-made pasta for soup that pits. It includes all the basic spices that give Thai soup that unique taste. Among other things, it helps to save considerably, because it allows you not to spend on each of the exotic ingredients separately.
Ingredients:
- green onions - 2 feathers;
- chicken fillet - 270 g;
- champignons - 5 pcs .;
- chicken broth - 1,1 l;
- pasta for soup with pits - 2 tbsp. spoons (or to taste);
- tomatoes - 95 g;
- fish sauce - 55 ml;
- sugar - 10 g;
- handful of green coriander;
- lime juice - 115 ml.
Preparation
The preparation of soup by volume begins with the cooking of broth. After bringing the ready broth to a boil, put into it pieces of roasted chicken, sliced tomatoes and mushrooms. When the broth comes to a boil, dilute it with pasta, lime juice and sugar. Pour fish sauce and try the soup, if necessary, adjust its taste at your discretion.
Tom yam is served immediately after cooking, with a generous portion of green coriander. Fans of the sharp can add to the dish pieces of chili peppers.
