Soup with minced meatballs - recipe

Sometimes there is a need to arrange a fasting day or a little on a diet. Doctors recommend in these cases to diversify the menu with the first dishes, there is a soup at least once a day. You can, of course, do with broths, but this is not always satisfying. An excellent option for dietary nutrition - soup with meatballs, for example, from chicken mince, the recipe for such a soup will be to the taste even for those who like to eat tightly and nourishingly.

If there is no broth, you can boil the soup and just on the water, but on the broth it will be more nutritious. We clean the vegetables and finely shinkem onions and carrots. In boiling broth or water, pour the vegetable oil, then dip the onions and carrots and after boiling reduce fire. Potatoes are cut into small slices convenient for food, and peppers - short thick straws. Wash the rice. When onion and carrots are cooked for about 7 minutes, we put potatoes and rice, and as much time later - pepper. Chicken fillet is passed through a meat grinder with a large nozzle, add the egg and mix well.

There are several options, how to make meatballs from minced meat for soup. You can type mincemeat with a teaspoon and drop these lumps into boiling soup. You can roll the meat balls with wet hands and continue to cook them. The egg needs meatballs to keep the shape better, however, if the stuffing is viscous enough, you can do without it.

We put meatballs in soup together with pepper. Cook for 10 minutes, then salt, pepper and add finely chopped greens. If you exclude rice and peppers from the recipe and increase the amount of potatoes by half, you will get a more satisfying potato soup with meatballs - also quite suitable for dietary nutrition.

Tomatoes are mine, we put them in a pan, pour boiling water and boil for no more than 3 minutes. We remove peel and rub on a grater or we pass through a meat grinder. Onions are cleaned and finely shredded. In a deep saucepan, let's pass the onion in oil until the time when it starts to brown, then pour in the tomato and stew for about 4 minutes. From the mince we roll balls with the size of a walnut. We pour soup into the saucepan, when everything boils, we lower the meatballs, salt and cook for 12 minutes. The soup is served by sprinkling finely chopped herbs. It is equally tasty and hot, and cold - for example, with sour cream or unsweetened yoghurt.

We clean the vegetables, finely chink the onions. In the saucepan warm the oil to a light haze, pass the onion to transparency, add finely chopped potatoes and pour half of the broth. We cook under the lid at minimum heat for about 15 minutes. Using a blender, turn our soup into puree, add grated cheese and mix, salt. At the same time, we let the pork pass through the meat grinder and form small balls of minced meat. Cook them in the remaining broth. We lay out meatballs on plates, pour soup with mashed potatoes, sprinkle finely chopped onions and chopped greens. Such cheese soup with meatballs served hot with croutons or crackers.
