Today we made a selection of options for cooking dishes without eggs. After all, sometimes it happens that they simply did not appear in the refrigerator at the right time or you need a lean pancake recipe.

For pancakes fit any zucchini fruits, both young and more mature. With overripe vegetables, you need to extract the core with the seeds and peel the coarse upper peel.

So, the courgettes are washed, dried and, if necessary, cleaned. Proceed to the next stage. We pass the flesh of fruits through an average or small grater. Then the mass is salted, after ten minutes we squeeze out the moisture, and put the remaining pulp in a deep bowl. Add the oat flakes, sifted wheat flour, soda, after having extinguished it with lemon juice, and mix it. We mass the mass with ground ginger, zira and curry. On average, you need half a teaspoon of spices. If the mass is liquid, add a little more flour.

Then you can do two things. Fill the obtained zucchini-hercule mixture with oiled molds or lay out a little of the dough immediately on a baking sheet, pre-covered with parchment and oiled with oil.

Preheat the oven to 185 degrees and bake our spicy squash pancakes twenty-twenty-five minutes.

Now sprinkle semolina. It may need a little more or less depending on the juiciness of the vegetables. The consistency of the finished dough should be similar to a thick sour cream after thorough mixing. At the end of the knead we interpose finely chopped greens and we can proceed to the final stage of preparation.

Warm up the frying pan with a thick bottom, pouring a little olive or sunflower oil, and put a little dough, using a tablespoon. Brush the zucchini pancakes on both sides and take it out on a napkin or a paper towel to absorb excess fat.

Vegetable fruits are washed, wiped dry and let through medium or coarse grater. Kefir is mixed with soda, after five minutes we throw salt, at the request a ground mixture of peppers and lay the squeezed squash from the juice.

We pour the sifted flour, mix well, so that no floury lumps remain, and we interpose the finely chopped greens of the basil. The dough should be thick enough to resemble fatty sour cream.

We bake squash pancakes in a traditional way on a frying pan heated with vegetable oil and, if desired, we impregnate the excess of fat with a paper towel as desired.
