At the next stage of preparation of wine from chokeberry, the pulp must be filtered by transferring berry gruel onto a sieve and squeezing it well with a pistil. Pour the juice into a jar and send it to ferment in the heat under the bolt, and the remainders of the pulp fill with about a liter of water and pour a glass of sugar (the proportion on the mash from 10 kg of berries). After a week of secondary fermentation, the pulp is squeezed again, the foam is removed from the surface of the juice under the hydraulic seal and the two solutions are combined together. The resulting mixture is again left under the hydraulic seal until the end of fermentation. After fermentation, the wine is carefully drained from the precipitate. Young wine can be tried, but it is better to pour it on bottles and pre-insist at least a month - its taste will noticeably improve.

At first, home winemakers want to be safe and make sure that wine will actively wander. Provide a fermentation can special wine yeast, but if you do not have them at hand, then the usual unwashed raisins will do.
