Carp baked in foil

Dishes from carp on our table, as, indeed, in the menu of many other nations are quite traditional.

We go to the bazaar and choose a fresh carp (better than living) with a brilliant mirror scales, bright pink gills and clear eyes. The optimal size of the fish is such that it is placed in a particular oven on a baking tray diagonally.

Carp cleanse from the scales, the insides and gills are removed. We wash the fish with running cold water, dry it with clean napkins inside and out. Knives are made on barrels infrequent and not too deep oblique parallel incisions. Slightly sprinkle the carp with lemon juice and rub it with a mixture of pepper and salt. We give the fish to lie down for half an hour, once again we dry it with napkins and grease it from the outside with melted butter (with the help of a brush). We warm the oven for 15 minutes in advance, the optimum temperature is about 180 degrees.

On a piece of foil of the right size, we spread out sparsely and evenly twigs of greenery. We put the carp from above and wrap it. For reliability, we repeat, that is, we pack in the second piece of foil. Package with carp on a grate or on a baking sheet we send to the oven.

How many minutes (that is, for how long) to bake carp in foil in the oven?

The fish will be ready within 30-50 minutes (this depends on the size).

Before unfolding we give the fish a "rest" of 15 minutes. Carp is served with sauce (squeezed garlic + boiled water and a little lemon juice) or fish broth . As a garnish, boiled potatoes are the most suitable. To carp cooked in this way, you can serve table wine, it is better light, but you can also red.

Carp in sour cream baked in foil with vegetables

We clear the carp from the scales, we remove the insides and gills. We make infrequent lateral incisions, it is possible cross-wise. Slightly sprinkle with lemon juice and sprinkle with a mixture of salt and black pepper. Let the fish lie down.

Peeled potatoes, carrots and mushrooms are cut into flat pieces suitable for baking and eating, put everything in a saucepan with a minimum amount of water and boil for 12-15 minutes after boiling. Carefully remove all the welded noise and place in a sieve. The broth is not poured, it is useful more.

A piece of foil of the right size (or better 2 - one on top of the other) with a brush is smeared with melted butter. From top to bottom we neatly spread potatoes, carrots and mushrooms, and on them - carp, only first it will be necessary to dry it with a clean napkin and also grease with oil. In the abdomen we will put a few twigs of green.

Bake carp with vegetables for 30-40 minutes. We unfold the foil, water the carp with vegetables, sour cream flavored with black pepper and chopped garlic. You can sprinkle with grated cheese. Return the baking sheet to the heated off oven in open condition for another 5 to 8 minutes. Serve with herbs and hot potato-mushroom broth.

It is possible to bake carp on vegetables in an oval ceramic shape of suitable size with a relatively high lip, and use foil for wrapping, it will be quite convenient. This dish is good to serve berry or bitter strong tinctures.
