Ingredients:
- turkey carcass - 5-6 kg;
- filtered water;
- salt - 200-250 g;
- granulated sugar - 125 g;
- cinnamon - 1 stick;
- laurel leaves - 2-3 pieces;
- peas of coriander - 20-25 g;

Preparation
To make a Christmas turkey turned juicy, the carcass of the bird must first be soaked in brine with vegetables for two or three days. To do this, in two liters of pre-boiled water, dissolve salt and sugar crystals, add peas and pearl coriander, throw a stick of cinnamon, laurel and boil a minute. After this, add the previously peeled and chopped onions and carrots and pour washed and stowed in a suitable size of the carcass of a turkey. We now add so much water that the resulting solution completely covers the bird. As we already mentioned, the turkey should be marinated for two or three days. To do this, place it in a cool place.
At the end of the marinated time, we get out of the brine, rinse and dry the turkey carcass, and then rub the bird on all sides with a mixture of soft butter, desired spices and spices and ground pepper. After that, we put the oranges in a boiling water and let stand for a moderate boil for a couple of minutes. Then we fill the fruit with buds of cloves and put the turkey in the belly. You can take one big orange or a few small ones. There we send the head of garlic, pre-washed it and cut it in half across.
Next, we lay the bird on a baking tray, pre-lining it with a foil cut, cover the bird with the second leaf and seal it, closing the edges of the lower and upper leaves. You can also use the sleeve for baking, by packing a bird in it and making a lot of holes for the steam exit from above.
The baking process itself consists of several stages. First we stand the bird for forty minutes at the highest possible temperature, and then reduce the regime to 180 degrees and cook for three and a half hours. After that, raise the temperature to 220 degrees, remove the top sheet of foil or cut the sleeve and let the bird become brown for forty minutes, periodically pouring with juices.
