How to cook a diet pizza?

In the classical version, pizza is an open cake filled with various ingredients. The filling can include both useful ingredients (tomatoes, cheese, olives, fresh vegetables , seafood), and not too useful (hot tomato sauce, meat smoked products, etc.).

To prepare a diet pizza, we will use only healthy products: quality flour, natural cheeses without vegetable fats and questionable additives (and not so-called cheese products), and, of course, you will have to do without smoked foods. Dough for pizza in the classical version is made on the basis of flour from wheat of solid varieties with the addition of starter, olive oil, water and salt. To prepare a dietary dough for the base of pizza, we are looking for flour with the inscription wheaten spelled whole grain or wholemeal coarse grits. As a starter, it is better to use fresh pressed yeast, rather than dry.

You can prepare a dough for diet pizza from a mixture of flour with bran (add no more than 20%).

Yeast is dissolved in water. We pour the flour into a bowl and make a groove. Pour in the oil and add salt. Gradually add the yeast solution and knead the dough with oiled hands. We knead carefully, but not too long, roll in a coma and let "rest" for 30-40 minutes in a warm place.

We form from the dough not a thick cake (tortillas) and put them on a greased baking tray or a special flat stone for baking pizza. Lubricate each cake with tomato paste, sprinkle a little grated cheese and spread the sliced ​​stuffing: pieces of sweet pepper, zucchini, boiled chicken meat, circles of olives, slices of tomatoes. We also sprinkle with grated cheese and decorate with greens. We bake pizza in a preheated oven for a short time: 8-15 minutes (depending on the particular device). Cheese does not have to flow.

Products for diet pizza

In the preparation of fillings for diet pizza, you can use boiled turkey meat, boiled lean beef or veal instead of chicken (meat can be ground into a large mince). It is good to cook diet pizza with seafood, for example, cooked for no more than 3 minutes and sliced ​​flesh squid and other edible shellfish, with pieces of marinated or lightly salted fish (it can be pre-soaked to reduce the salt content). Shrimp are not very suitable for cooking diet pizza because of the cholesterol content.

To prepare the filling for diet pizza with mushrooms, you can use oyster mushrooms (edible and even more useful in raw form), young champignons or ceps (better to boil them for 20 minutes).

In an even more radical version, we prepare the dough for the basis of diet pizza without flour. Flour can be replaced with soaked in water or milk, oatmeal or multi-cereal flakes. Well-soaked and swollen flakes can additionally be pierced with a blender and add a fresh chicken egg.
