Humus: recipe

The hummus dish is a very popular (and not only in the Mediterranean) appetizer. Mention of this dish can be found in the famous ancient work of Homer "Iliad". Classic hummus is a paste made from cooked and chopped chickpeas. The composition can also include olive and sesame oils, sesame (sesame) pasta or sesame seeds, garlic, paprika, lemon juice, and sometimes other products and condiments. In Hebrew and Arabic, the word "hummus" means simply "pea-chickpeas" (nagut), and the ready-made dish itself. Humus is very popular in all countries of the Middle East, in India, Turkey, USA. In many countries it is sold in ready-made form.

The recipe for hummus

We offer you a classic recipe for hummus.

Ingredients:

Preparation:

Chickens will be filled with boiling water and left for the night. In the morning, salt water and rind the peas. Again, fill it with clean cold water, already in the cauldron. Put the cauldron on the fire, bring it to a boil and cook for about 10 minutes. We pour water and then rinse again - these manipulations are needed to reduce the unpleasant "musical" consequences. Again, fill it with clean water and cook until ready. Let's salt the water. Let's cool the cooked chickpeas and blast it to homogeneity or we'll crush it by hand (you can use a meat grinder). Add the butter and chopped garlic. The base hummus is ready. You can add various fillers that determine the taste, in our case it is lemon juice and spices. You can add crushed aromatic herbs. Ready hummus in a closed container put on an hour in the fridge and you can spread pancakes, pita bread or slices of bread.
