Then pour in cold vodka and mix everything thoroughly. Pork tenderloin washed, we dip a towel and abundantly rub the meat from all sides with a fragrant mixture of spices. We spread the prepared pork into a saucepan, cover it with a plate and send it to the refrigerator for 14 hours. To allow the meat to salivate evenly, turn it over every 3 hours. After the time has elapsed, the cut is thoroughly washed under the tap, removing all the spices and the crushed laurel leaf. Again, we dry it with paper napkins and put it into a bowl. Garlic is cleaned, shredded in small cubes and sprinkled with meat from all sides. Now we take the gauze and tightly wrap the pork in it, tying it tightly with a thread. After that, we spread it on the grate or hang it so that there is free air access. Dry the meat in this form for 12 hours, and then remove it for 3 days in the refrigerator. Remember that the longer it will dry, the more salty and denser the result will be. In a day we must remove it from the gauze, so that it does not deteriorate.

Pork flesh is laid out in a bowl, copiously sprinkled with salt and cleaned for 3 days in the refrigerator. We wash the meat and go on to prepare the pickle. Vinegar is mixed with a spoonful of salt, throw a little ground pepper, squeeze through the garlic press and put rosemary and sweet paprika. We shift the tenderloin into a brine and carefully dab it. For powder we combine in a piallet a mixture of peppers with seeds of coriander and properly grind. After that, we take the meat out of the brine, put it on a sheet of parchment and roll in a fragrant powder on all sides. We wrap it in paper and give it a round shape. Then we put the meat in a bowl, tighten food foil and send it for a day to the refrigerator. During this time, the chicken will release the juice, which we do not drain. After a while, rinse the breasts under cold water, rinse the spices and dry the meat with a paper towel. Garlic is cleaned, chopped and rubbed with salted chicken breasts. We wrap the meat in a clean gauze and send it to the refrigerator for another 24 hours. In a day the jerky is ready - cut it into thin slices and serve as a snack to the table.
