Tortilla with tongue

Tortilla is a small Mexican flat cake made from corn or wheat flour, similar in texture to the lavash familiar to everyone. Accordingly, you can literally do anything in such a flat cake. We decided to take this chance and make a tortilla with a tongue or Tacos de Lengua.

Tortilla with beef tongue

Let's start cooking tortilla with cooking beef tongue. We collect in a large pot of water, we put in it onions, crushed garlic cloves, bay leaves, peppercorns and salt. Then we immerse the tongue and bring everything to the boil. After boiling, we reduce the heat and cook the tongue for about 3 hours.

Boiled tongue is cleaned of films, cut off all unnecessary and cut it into cubes. In cakes we put a little sauce of salsa, slices of avocado, Bulgarian pepper and chopped parsley. Fold the tortillas in half and fry in a dry frying pan on both sides.

Tortilla with arugula and veal tongue

Beef tongue is boiled in vegetable broth until ready. Finished tongue is cleaned and cut into strips. Cut the avocado slices, chop the red onions and cut the tomatoes. We lay out the tongue and vegetables on the corn cake, we distribute the freshly caught handica from the top, water it with sour cream, lime juice and season with salt and pepper.

The tongue is boiled in chicken broth with onions, parsley, carrots and garlic for about 4-5 hours. Finished tongue is cleaned and cut into strips. Fry slices of the tongue in vegetable oil until golden, seasoned with salt and pepper.

Spread the language on flat cakes, pour tomato sauce or guacamole sauce, sprinkle everything with chopped parsley and cheese.
