Vegetable cutlets - recipe

Summer gives such a variety of vegetables that many recipes become available, which could only be dreamed of in the cold season. The recipe, which we will talk about further, can become a part of your diet in winter and summer, the only thing that will change is the variety of vegetables that can be used in cooking. So, today we will devote time to cooking vegetable cutlets.

Many of us, for various reasons, do not eat meat and animal products. This fact does not prevent you from preparing delicious lean cutlets from vegetables that you can eat for nothing, or cook a burger with them.

My potato, clean, cut into cubes and boil in salted water until ready. Carrots and beans are also boiled, and onions are allowed in vegetable oil along with the paste from ginger and garlic.

Boiled potatoes mash with beans in puree, add carrot slices and onions. In a mortar, grind coriander with cumin, add turmeric, salt and pepper. With the resulting spicy mixture, we season the basis for our cutlets. From the finished mass with wet hands we make cutlets and crumble them in bread breading .

In a frying pan, we heat the oil and fry the vegetable patties on it to a golden crust on both sides.

How to cook vegetable cutlets for a couple?

Beetroot and carrots are cleaned, and then rubbed on a fine grater. Carefully squeeze out excess juice. Onion grind and mix with grated vegetables.

Pour the semolina with warm water and leave to swell, and then add the mango to beets, carrots and onions.

Potatoes carefully washing, wrap the tubers with foil and bake them in the oven until soft. Ready-made tubers are cleaned and purried. Mashed potatoes are mixed with the rest of the vegetables, and afterwards we add chopped prunes, salt and pepper to the cutlets.

With wet hands, the shape of the cutlet and put them is cooked in a steamer bowl for 20-25 minutes.

Also, vegetable cutlets can be cooked in a multivark, if the device has a "Steam cooking" mode. After 15-20 minutes, the cutlets will be ready. Pour them low-fat sour cream or yogurt before serving, sprinkle with herbs and enjoy the taste and benefit of this dish.

Oven reheat to 200 degrees. We apply grease to cupcakes with vegetable oil.

We rub zucchini on a large grater and squeeze out excess juice. To the vegetable mass, add egg, breading, hard cheese and crushed onion. Salt and pepper are put to taste. Thoroughly mix the base for our cutlets and evenly distribute it between all the mold holes. We put the forms with cutlets in the oven for 18-20 minutes. By the way, forms for cupcakes are not required, you can put the cutlets on a simple baking tray, having covered it with a sheet of parchment for baking.

Ready-made vegetable patties are suitable for both children's menus and adults. Serve them with sour cream or Greek yoghurt.
