For more than 100 years in most countries of the former USSR, the basis of dietary nutrition is the diet of Pevzner Manuil Isaakovich and his students. The so-called diets for Pevzner are designed for proper nutrition with specific types of diseases. Tables are designed in such a way that in any disease a person can control his state of health and prevent exacerbations.
Diet № 1 for Pevzner
The first table has three varieties: the general diet 1, as well as the diets 1a and 1b, which are necessary for exacerbating the diseases for which the first diet is calculated (this includes peptic ulcer, duodenal ulcer, chronic acute gastritis at the stage of fading):
- salt restriction;
- restriction of irritants of the gastrointestinal mucosa;
- all dishes are cooked in boiled form or steamed, rarely in baked;
- caloric content per day from 2600 to 2800 kcal, of which 90-100 g of proteins, 90 g of fat, 300-400 g of carbohydrates
The diet assumes a fractional diet - 5-6 meals a day.
Diet № 2 for Pevzner
This species has two varieties, in which the indications are slightly different. For the second diet, these are acute gastritis, enteritis, chronic gastritis with secretory deficiency, colitis, without concomitant diseases.
- everything is allowed, except for foods that are slowly digested or irritate the gastrointestinal mucosa;
- all dishes require a different degree of grinding;
- You can cook in all ways;
- caloric intake per day from 2800 to 3100 kcal, of which 90-100 grams of fat, 90-100 g of proteins, and 400-450 g of carbohydrates
It is also necessary fractional meals.
Diet № 3 for Pevzner
Such a diet for Pevzner is needed for people suffering from chronic intestinal diseases with constipation, as well as with accompanying diseases of the stomach, biliary tract, liver, or pancreas.
- excluded products that enhance the processes of putrefaction and fermentation in the intestine,
stimulate bile secretion, secretion of the stomach or pancreas; - excluded substances, products rich in essential oils or cholesterol; any fried foods;
- allowed food in a non-crushed form;
- recommended cooking - steamed, or boiling;
- raw vegetables and fruits are allowed;
- caloric content of the diet from 2900 to 3300, of which 100-110 g fat, 100-120 g proteins, and carbohydrates 400-450 g.
As with other diets, fractional food and refusal of excessively cold and excessively hot food are recommended.
