Recipe for grated sand pie with currant jam
Ingredients:
- flour - 355 g;
- powdered sugar - 55 g;
- butter - 235 g;
- egg yolks - 2 pieces;
- water - 25 ml;
- currant jam - 310 ml.

The fastest way to knead a short dough is to whip it with a blender. So the oil will not heat up from the heat of the hands, the dough will come out crisp and layered, and you will be able to save time. If the blender is not available, chop butter and flour mixture with powdered sugar into a crumb with a knife, add egg yolks to the crumb and pour in ice water. Collect the dough together and leave in the cool for half an hour. After the passage of time, separate about a third of the test, and roll the remaining 2/3 rolls and put them into the chosen form, after covering the last parchment. Spread a layer of jam over the dough. The remaining dough crumble and sprinkle the surface of the cake. Bake for 20 minutes at 180 degrees.

If you want to make a crumb and sand base different in texture, then prepare them for a slightly different recipe. In order to make the crumb more crispy, it does not need to add milk, leave it dry and sprinkle on the surface of the cake immediately before baking.

- flour - 255 g;
- butter - 115 g;
- milk - 45 ml;
- powdered sugar - 10 g;
- jam - 270 ml.
For crumbs:
- flour - 145 g;
- butter - 95 g;
- sugar - 65 g;
- pinch of vanillin.
