Pour the rest of the sugar and mix. Boil the syrup for about 5 minutes. Ready syrup, flowing from a spoon, must form a "thread". In apple puree we add protein and whisk it well. Without stopping the whipping process, we add a thin trickle of hot syrup to the apple-protein mass. In this case, the zephyr mass should increase well in volume. Continue to whisk until dense peaks until the mass gets a temperature of about 40 degrees. Now we spread it into a confectioner's bag and on a baking sheet covered with baking paper, we form marshmallows. Leave our products at room temperature for about a day to dry up. Slightly cool, combine with gelatin and whisk the mixer at a low speed for about 10 minutes. Do not stop the whipping process, add citric acid and vanilla. Beat for about 5 minutes, then add the soda and whisk another 5 minutes until a thick foam. After that, leave the mass for another 3 minutes. And then divide it into 2 parts, one of which we still divide in half and lay out on different dishes. Add the juice of mint to one part, and the second saffron. Immediately, without delay, whisk the mass with a mixer. We cover the baking tray with parchment, slightly grease with oil. We take a pastry bag with an asterisk and fill it with a mass. Gently squeeze the figures on paper and put them in the refrigerator for 2 hours.
