Pastila at home

The real pasta is delicious and, we can consider, a useful product. According to one of the versions, fruit pastilles, a delicacy, known in Russia since the XIV century. Presumably, the recipe was invented by the inhabitants of Kolomna. Initially, the preparation of the pastille looked as follows: the beaten fruit and berry puree was mixed with honey (later - with cheaper sugar), this mixture was applied evenly to a stretched fabric on the framework and dried in a cooling furnace. Then the obtained layers were layered and subjected to secondary drying in special alder boxes. Since the 15th century, egg whites have been added to the pastille, but this component is not necessary.

Not everyone who loves this dessert knows about pasture, currently sold in stores (a delicacy similar to marshmallow) is just a simplified version of fruit sweetness. But you can make a real pasta at home. To do this, usually use different fruits: fruits, berries, pumpkin, melon. Preparing pastilles at home is not so difficult. Of course, it is good to prepare a home-made pastille in a Russian oven (in the mode of long-term gradual cooling), but you can achieve good results using modern ovens and other convenient kitchen devices.

Pastilla from quince

The recipe for pastilles, prepared at home from quince, is not particularly complicated.

Consider how to prepare the pasta from quince. The fruits of the quince are washed and wiped. We cut each into 4 four parts, remove the core, add the prepared apples in the same way. As the fruit is cut and cleaned, immediately put them in a pan of cold water (at a rate of 1 kg of fruit -1.2 liters).

Cook for about an hour, covering the lid, on low heat. We rub through a sieve (not too shallow), add sugar and lemon juice. Again, we boil the fruit mass on the lowest heat. Periodically stir, prepare until thick.

When the mass is well cooked and becomes viscous enough, we spread it on a clean board moistened with water and spread it with a spatula moistened in water or with a wide knife, achieving a layer thickness of about 1 cm. Cover it with clean gauze and place it in a dry, well-ventilated place on day. When the pastille dries, we dry it in the oven, cut it into short strips and crumble it in sugar powder. Such a pastille can be stored for a long time in tin boxes.

You can prepare the pastille at home in a slightly different way. For this, a greased baking sheet should be laid with a sheet of oiled baking paper, on top of an even layer lay a fruit mixture. The pastille in the form of a leaf is dried in several steps. Then the layer can be rolled up with a roll and cut into slices or folded several dried layers of pastille on top of each other (beautifully, if the layers are of different fruits), slightly compressed and cut into small strips.

Pastille from jam

It is quite convenient to prepare a homemade pastille from jam or fresh berries, wiped with sugar. This is an excellent dessert, which can be safely given to children, because you know exactly what it is made of.

Jam for making pastilles at home should be sufficiently thick, in addition, it must be brought to a homogenous blender and rub through a not too small sieve. After that, you can already add the egg white and act as described above.

Traditional folk ways of cooking homemade jam do not require a lot of sugar. Thus, it is a more useful product than jam. Hence, and pastila from jam will be more useful. In addition, it can not add egg white.

From what kind of jam to prepare a pastille - a matter of taste, but many believe that from plum delicacy you get a particularly delicious dessert. We serve the pastille for tea.
