Smoked ribs - recipe in smokehouse

Ingredients:

Preparation

Pork ribs are rid of the film and washed under cool running water. Now we are preparing the brine. To do this, pour water into a ladle or a saucepan, pour in salt and sugar and heat, stirring, to a boil. Let the liquid cool down and fill it with prepared pork ribs. We have a container with a workpiece in a cool place for prosolki for three days, turning the ribs daily in brine.

After a while, we take the ribs from the brine and hang it for a couple of hours in a ventilated place or ideally in the air to dry. Now mix the vodka with chopped garlic, ground pepper and bay leaf and rub the fragrant "drunken" mixture of dried ribs. We put the product in a bag or wrap it with a food film and place it on the shelf of the refrigerator for a couple of days.

For smoked pork ribs we will need a smoking smokehouse, since in the "cold" device it will not be possible to get the desired taste of the snack. The meat will simply dry up in it during a long stay in the smoke and will become oak and not tasty.

We place the promarinovannye ribs on the grill smokehouse, previously pouring on the bottom of the device of wet sawdust and installing a tray to collect fat, and smoked at a low temperature for three to four hours.
