Stewed zucchini with vegetables

Due to the low caloric content zucchini can be called a dietary product and used even in the strictest diets. In its raw form, this vegetable is used very rarely, in general, before it gets on the table, it undergoes heat treatment: cooking, quenching baking, frying.

Stew zucchini preferably together with other vegetables: onions, carrots, potatoes, peppers, tomatoes. And the addition of stewed dishes from squash of different spices and seasonings allows you to find new flavors of this vegetable.

Before the process of extinguishing, all vegetables are cut into cubes and fried until half cooked, or even better until a ruddy crust. In this case, the vegetables will retain their shape and, when extinguished, they will not turn into porridge.

Squash carefully washed and cut into cubes. Onions cut into half rings, carrots are rubbed large. On vegetable oil fry until golden color onions, add carrots and fry for about 5-7 minutes. To the onions and carrots we put marrows. Salt and fry for 5-10 minutes. We spread tomato paste with water, add green onions and fill zucchini. We continue to stew until the zucchini is ready.

We heat the grill in the oven to the maximum. Wash all vegetables thoroughly. Pepper cut into two parts along and clear of seeds. Eggplant also cut into two parts along. We put onions whole. Lining is lined with parchment paper. Vegetables are laid slit down on paper and bake under the grill for seven minutes.

If you do not have a grill, vegetables can be baked at the top of the oven at 250 degrees for 20 minutes. We clean the potatoes, wash them and cut them into cubes. In the same way we process zucchini. Garlic is cleaned and crushed.

We add vegetable broth and tomatoes. All the salt, sprinkle with spices. We continue to stew until the vegetables are ready. The table is served hot.

Zucchini stewed with vegetables in sour cream

Zucchini is cleaned and cut into cubes. Finely cut onions and carrots. Rice is washed in seven waters and left to swell. Fry zucchini in vegetable oil, then shift them into a pan with a thick bottom. Separate from zucchini fry onions and carrots. When onions with carrots blush, pour in sour cream and stew for 3 minutes. We pour the mixture into the zucchini.

Pour out the rice and spread on the surface of vegetables, salt and pour water or broth. The liquid should be poured 2 cm above the rice. Cover the pan with a lid and continue to simmer on low heat until rice is cooked. Vegetables stewed in sour cream are ready, you can serve on the table.
