Delicious eggplant casserole

Eggplant is a successfully cultivated herbaceous plant of the Nightshade family, by now many cultural varieties are known, the fruits of which, in some ways, differ in appearance and slightly to taste. Cut the eggplant into circles with a thickness of about 0.4-0.8 cm and place in a bowl of cold water for 20-30 minutes to remove the venom of solanine. If you quit smoking, you can reduce the soak to 10-15 minutes (the substances contained in eggplant, in some way, replace nicotine).

While the aubergines are soaked, we will deal with the stuffing. Clean and finely chop the onions. Save it in a frying pan in oil until light transparency. We will add minced meat and, actively manipulating the scapula, we will fry all together before changing the color of the mince (about 5 minutes). During the process, add dry ground spices.

Let's return to the cut aubergines. Rinse them and put them on a napkin to remove the remaining water. We pour in flour and fry in a separate frying pan on both sides until golden brown. We throw fried eggplants on a napkin to remove excess oil.

By this time the forcemeat has cooled down sufficiently, we add eggs to it and mix it. Slice the tomatoes into thin slices and rub the cheese.

Lubricate the shape with butter (however, this is not necessary) and lay out half of the fried eggplant, and the next layer - half the minced meat. Next - again a layer of aubergines, sprinkle with grated cheese, using half. Then again a layer of minced meat, and on top - slices of tomatoes.

Bake in the oven at a temperature of about 180 degrees C for 20-25 minutes. Sprinkle with the rest of grated cheese and decorate with greens. We serve with light table wine and flat cakes or lavash.

If you want to make a dish lean, you can do without meat and eggs, and cook a casserole of eggplant and courgettes - this flavor combination will be completely harmonious. You can cook with cheese or without - as you wish (fasting and vegetarianism are of various uses).

The list of ingredients will look approximately the same as for the first recipe (see above), excluding minced meat and eggs. Kabachkov needs about the same amount as eggplant (by weight).

Baked eggplant and zucchini casserole

We operate, approximately following the first recipe. If zucchini are not very young, you can clean them first. We cut them, like eggplants - in thin circles, roll in flour and fry. Season with chopped garlic and sprinkle with juice lemon. Lay layers of courgettes instead of layers of minced meat. It is better not to rule out the cheese, lightly pouring each layer over it.

The list of ingredients can include young potatoes. It should be boiled to half-cooked, then cut into thin slices and spread out in separate layers, as well as the rest of the casserole.

It should be noted that vegetable casseroles, in which eggplants are one of the main ingredients, are not only tasty and delicious, but also useful dishes (of course, if you do not overcook).
