It happens that under the New Year celebration, we bought tangerines much more than was necessary. To prevent the fruit from spoiling, we cook jam from them. Although, of course, with thermal processing, vitamin C is destroyed, but still, tangerine jam - it's very tasty, you can cook and lobules and crusts (together or separately).

How to cook jam from tangerines?

There are different ways of preparing tangerine jam, but to make whole lobes, we will act as follows.

Weld a thick sugar syrup : dissolve the sugar in boiling water on low fire and cook, stirring for 5 minutes until complete dissolution. Let's rum (it will help to preserve the natural shape of the lobules), if you like, we will add cinnamon. We dip the tangerine slices into the boiling syrup, after a general boil, cook on the lowest heat for 5 minutes, gently stirring with a spoon. We remove the foam. Jam can be placed in clean glass jars or ceramic pots. Keep this jam after cooling can be on the cool veranda, on the balcony, on the shelf of the refrigerator. We serve mandarin jam for tea, you can use it to make confectionery.

Cook in a saucepan sugar syrup (sugar + water, boil for 5 minutes) and shift the mandarins into it. We pour in rum or vodka. Cook after boiling for 5 minutes on low heat, after which we cool. Repeat the cycle up to 5 times. We put the prepared jam in glass jars and cork them. Mandarin jam with peel have special healing properties, it can be stored for a long time in cool at plus temperature (glazed loggia, veranda, pantry).

The washed mandarins are cut across with round slices of medium thickness, the seeds and stems are removed. Blanching slices, that is, pour them with boiling water for 5 minutes, then drain the water. We fall asleep with sugar and leave for 4 hours, then pour in water, rum or vodka and boil 5 minutes after boiling gently stirring. Cool it down. Repeat the cycle up to 5 times, it is important not to digest. We seal in clean glass jars, which we store in coolness. This jam is also very suitable for decorating cakes and pastries.
