But if everything is prepared for okroshka, then many people did not try to refrigerate, but in vain! We advise you to correct this misunderstanding and prepare this dish, if only because it's easy!

We will pickle one beet, for this it must first be boiled. Fill with water, add 25 g of sugar, so that it was more sweet and cook for 40 minutes, after the water boiled. Then drain the boiling water and pour cold water. Clean, sometimes it's just done with your hands, but often you have to resort to using a knife. Further we grind on a grater and we put in a liter jar or other high capacity. Pour marinade from 200 ml of water, 100 ml of vinegar and 25 g of sugar. The liquid should be so much that it covers the beets. So it is advisable to marinate for 12 hours, i.e. you can do it from the evening, and in the morning to cook or vice versa.

From the rest of the beet, we prepare the broth, for this we clean the tubers and cut them into small cubes or straws, well, or if it's too lazy, you can just rub it. Fill the beet with water, about 1.5 liters add 15 ml of vinegar to maintain a bright saturated color. Cook after boiling for 15 minutes, set aside and let it cool completely, you can put it in the fridge to make it cool.

We make a vegetable base for the cold, start with greens. It can be any of your favorite greens, even lettuce and beet leaves, the main thing that it was a lot. We cut it finely, sprinkle with salt and change it a little, you can tolkushkoy, you can directly with your hands. This is done so that it better surrenders its taste and then does not swim from above. Radish and cucumbers cut into strips, if the cucumber is hard on the cucumber, then cut it. Garlic is also finely chopped and mixed with the rest of the vegetables and herbs. We cut an egg into a cube and send it to the vegetables.

We prepare the liquid basis proceeding from our preferences, usually per serving - this is 100 ml of kefir, the same amount of beet broth and 2 tbsp. spoons of pickled beets. But you can mix as you like.

The next time you can replace garlic with mustard, it will also be very tasty.

Now we put a vegetable base in the plates and fill it with the dressing, regulating the liquid to taste, and also adding salt and pepper.

Yolks pounded with horseradish, a spoonful of sugar and a small amount of sour cream, this will be refueling. Then the cold oxalic broth is laid out on plates, we pour in vegetables and greens, we put refueling and sour cream as much as we want. Add to taste, you can add sugar, citric acid and pepper.
