Buds in sour cream - recipe

Kidneys (pork, beef, sheep) are not the most popular of the sub-products of culinary specialists because of the specific odor caused by the functional characteristics of this organ. Meanwhile, the kidneys are an inexpensive product, pure meat with almost no fat, and if you cook it correctly, everything will turn out quite edible, unproductive and even tasty. For example, you can prepare the kidneys in sour cream.

Before preparing any dish from the kidneys, they must first be properly prepared.


Preparing the kidney for cooking

We cut each kidney in half along, with a knife, carefully remove the films and ureters. Soak the kidneys in cold water for several hours (from 2 to 8). Rinse, cut the halves of the kidneys across (or diagonally) slices, place in a bowl, abundantly sprinkled with baking soda, mix and leave for 20 minutes. After passing this time, pour a solution of natural wine or apple cider vinegar with water (ratio 1: 1).

After passing the reaction, thoroughly wash the kidney pieces with cold water. Beef or mutton kidneys are then boiled in a large amount of water for 5 minutes after boiling, then thrown back to a colander. Veal, pork and sheep buds can be cooked without preliminary digestion.

After the buds are prepared (see the beginning of the text), lightly marinate them for about 20 minutes. The composition of the marinade: lemon juice, 2 cloves of garlic (grind), dry spices, salt. After marinating, we will rinse the pieces of kidneys and throw them into a colander or napkin.

Heat the oil or fat in a frying pan, cut the peeled onions into quarter rings. Fry pieces of kidneys and onions, turning the spatula about 3-5 minutes, then reduce the fire and stew, closing the lid, sometimes stirring. If necessary, you can add some water. Stew for 25-40 minutes.

Sour cream is seasoned with a mixture of curry and paprika. Add this mixture to the frying pan. We mix it up, warm it up a little, but do not bring it to the boil. Serve stewed buds with any garnish (potatoes, buckwheat , peas, beans, etc.), immediately before serving sprinkle with chopped herbs and garlic.

Beef kidneys in sour cream are prepared in much the same way, only first they must be boiled for 5 minutes in large quantities of water, then the water is drained and can be cooked.
