Let's start with the classic recipe, which contains only flour of solid varieties and eggs. Noodles from such a dough turns out to be quite dense and keeps the shape well, not boiling, but as a plus it has a pleasant yellowish tinge due to the abundance of yolks.

If you are not sure about the quality of flour, it is always better to sift it beforehand, and then mix it with a good pinch of salt. You can sift directly on the work surface, on it a stiff dough will be much more convenient to mix. Mix the yolks with whole eggs and pour into the hole previously made in the center of the flour hill. Collecting the flour from the edges, start mixing the ingredients, forming a dough. It will not be easy to knead it for a long time, but it is necessary to strengthen the gluten filaments. Continue mixing for 5-10 minutes, then leave the dough in the cold for half an hour.

For rolling it is convenient to have a machine for pasta, but you can do with a pair of strong hands with a rolling pin. Thinly roll the dough, roll it into a roll and cut into noodles.

How much to cook egg noodles depends on its thickness, thin ribbons should be cooked no more than a half minutes in salted boiling water or broth .

Home egg noodles - recipe

The tinted pasta looks more alive on the plate and is original, and the eye catches. As a dye, we recommend using natural vegetable juices, in our case - spinach juice.

In a hill of sifted flour, make a hole and pour oil into it with spinach juice. Add the olive oil next and gradually start mixing, picking the flour from the edges. Work the dough with a food processor or manually for at least 10 minutes, then leave to rest in the cold, wrapping a sheet of film. The stale dough is thinly rolled and cut into noodles of the desired width. Cook immediately or pre-dry.

How to cook egg noodles with chicken?

Chicken fillet cut into strips and quickly fry only until the pieces do not grasp the outside. In a frying pan, place broccoli inflorescences, pour a little water and let them steam until soft. Transfer broccoli to chicken. In the same bowl, fry the flour and dilute it with milk. Season the resulting mixture and leave to boil until thick, not forgetting to add leaves of oregano and rosemary in the middle of the preparation. Drizzle the prepared sauce with lemon juice and mix everything with chicken, broccoli and grated cheese. Add freshly brewed noodles and remove everything from the heat. Savor the prepared dish of egg noodles with herbs and fresh tomato slices.
