Periodically mix with a wooden spatula or spoon. When the juice appears, remove the lid and boil the jam, stirring, for 30-40 minutes, after which we remove the dishes from the fire, cover with a lid and leave for 5-8 hours.

The cycle "boiling with stirring - cooling" is repeated several times. Readiness of the jam is determined as follows: a drop placed on a saucer does not spread, the jam is easily separated from the walls of the working container. When the readiness of jam is reached, we transfer it to sterilized glass jars. We put it under the throat, pour it over melted butter - so we will protect the jam from possible molding. Now we can either roll up the jam with sterilized tin lids - in this version, do not turn the jars. Or we seal the hole with pure parchment paper (over the paper you can tie a jar around the throat with a piece of twine, put on an elastic band or a plastic lid).

Keep the jam cooked in jam is best at low, but plus temperature (glazed non-cold veranda, loggia, cellar, dry pantry).
