Mussels are a very useful delicacy, comparable to oysters.
You can prepare mussels in different ways, for example, make different salads with them. Especially good mussels are combined with rice, so let's take these two products as the basis for salads.
Recipe for dietary salad from mussels with rice
Ingredients:
- flesh of mussels - about 300 g;
- rice - 1-2 cups;
- sweet red pepper - 2 pcs .;
- avocado - 1 fruit;
- onion - 1 pc .;
- zucchini - about 150-200 g;
- lemon or lime;
- hot red pepper;
- garlic;
- Fresh greens are different;
- cold pressed vegetable oil;
- vinegar, natural fruit;
- leaves of lettuce, chicory or endive.
Preparation
Mussels should be thoroughly washed and pelted in a pot of boiling water. After opening the shells, cook for another 1-minute (this is enough) and drain the water. Cool it with cold water, extract the edible part of the mussel (this is the muscle-pump).
Rinse thoroughly (preferably with hot water) rice , without stirring, in a large amount of water for 8-16 minutes (depending on the variety). You can rinse it again and drain the water.
We cut the onions into quarter rings and connect it in a bowl with the selected pieces of mussels. At once we will marinate, for this purpose we mix oil with vinegar and / or juice of a lemon or lime (a parity approximately 3: 1). Add the sliced sweet pepper, finely chopped garlic, hot pepper and greens. We mix it.
Remove the stone from the avocado and separate the pulp using a spoon. Cut into small cubes and add to salad. Let the salad stand, promarinuetsya minutes 20.
Now put the cooked rice and mix. We spread salad leaves (chicory, endive) on a serving dish, and on top we place a portion of salad. We decorate with leaves of greenery.
You can lay out rice next to a salad of mussels (through a ring or other special form) - it will turn out beautifully. We serve salad with mussels and rice with light wines.
You can give the salad with rice and mussels the Far Eastern color, use mustard or sesame oil or a mixture of them, increase the amount of pepper, garlic and cilantro, add soy sauce and / or other traditional sauces. Of course, salads in the Far Eastern style are better served with authentic alcoholic beverages: rice wine, sake, soya, maotai, ergothu, fruit wines.
If you want to make a warm salad with rice and mussels, flesh of mussels can be lightly fried with finely chopped onions.
