Mussels salad with rice

Mussels are a very useful delicacy, comparable to oysters.

You can prepare mussels in different ways, for example, make different salads with them. Especially good mussels are combined with rice, so let's take these two products as the basis for salads.

Mussels should be thoroughly washed and pelted in a pot of boiling water. After opening the shells, cook for another 1-minute (this is enough) and drain the water. Cool it with cold water, extract the edible part of the mussel (this is the muscle-pump).

Rinse thoroughly (preferably with hot water) rice , without stirring, in a large amount of water for 8-16 minutes (depending on the variety). You can rinse it again and drain the water.

We cut the onions into quarter rings and connect it in a bowl with the selected pieces of mussels. At once we will marinate, for this purpose we mix oil with vinegar and / or juice of a lemon or lime (a parity approximately 3: 1). Add the sliced ​​sweet pepper, finely chopped garlic, hot pepper and greens. We mix it.

Remove the stone from the avocado and separate the pulp using a spoon. Cut into small cubes and add to salad. Let the salad stand, promarinuetsya minutes 20.

Now put the cooked rice and mix. We spread salad leaves (chicory, endive) on a serving dish, and on top we place a portion of salad. We decorate with leaves of greenery.
