Bulgarian pepper is suitable for food not only in its raw form. Vegetables are great for stuffing, and it also retains its shape and flavor very well after frying, quenching and preserving. About different recipes with Bulgarian pepper and will be discussed further.
The recipe for stuffed Bulgarian pepper
Ingredients:
- olive oil - 1 tbsp. a spoon;
- onions - 1 pc .;
- beef broth - 250 ml;
- tomato sauce - 2 items;
- Balsamic vinegar - 1 tbsp. a spoon;
- ground beef - 750 g;
- rice (boiled) - 2 items;
- grated parmesan - 1 item;
- garlic - 3 cloves;
- salt pepper;
- Bulgarian peppers - 6-8 pieces.
Preparation
Boiled rice mixed with minced meat, cheese, passed through the press with garlic, salt and pepper. From the Bulgarian peppers we cut out the core and stuff them with a mixture of rice and meat.
On olive oil fry onions until transparency. Add tomato sauce , vinegar to the onion and pour in the broth. Bring the sauce to a boil and remove from heat. Spread the peppers on the baking tray for baking close to each other. Fill all the sauce and put in a preheated to 160 degrees oven for 1 hour.
Recipe lecho of bell pepper

Ingredients:
- tomatoes - 1,5 kg;
- Bulgarian pepper - 1,5 kg;
- salt - 2 tbsp. spoons;
- ground black pepper - 1/2 tsp;
- vinegar - 30 ml;
- sugar - 2/3 of the item;
- vegetable oil - 100 ml;
- bay leaves - 1 pc.
Preparation
Tomatoes are blanched, peeled and paired with a blender. Puree boil for 7-10 minutes, season with salt, pepper, sugar and vinegar. Fill the tank with tomatoes oil and add the semicircles of Bulgarian pepper. We quench the mixture for 15-20 minutes on medium heat with a laurel leaf. We pour out lecho on sterilized jars and roll them up.
Recipe for borscht with Bulgarian pepper
Ingredients:
- meat broth - 2 liters;
- boiled meat - 500 g;
- lecho (see the previous recipe) - 2 items;
- onions - 2 pcs .;
- carrots - 1 piece;
- cabbage - 300 g;
- vegetable oil;
- salt pepper.
Preparation
Onions and carrots wessed on vegetable oil. Cabbage shred. We bring the broth to a boil and add a dressing, lecho, sliced meat and cabbage. Cook the borscht until the cabbage is ready on medium heat. Salt and pepper add to taste.
Recipe for salad with bell pepper
Ingredients:
- garlic - 1 clove;
- wine vinegar - 2 tablespoons;
- Bulgarian pepper (different colors) - 3 pcs .;
- parsley - 1/2 beam;
- olive oil - 2 tbsp. spoons;
- salt, pepper - to taste;
- red onions -1 pc .;
- Feta cheese - 120 g.
Preparation
Garlic is passed through the press and mixed with vinegar, butter, salt and pepper. We cut the parsley. We cut the peppers into semi-rings, and the onion - thin rings. Mix the ingredients in a salad bowl, pour with dressing and sprinkle with cheese.
A recipe for cabbage with bell pepper
Ingredients:
- olive oil;
- leeks - 1 piece;
- garlic - 2 cloves;
- carrots - 2 pieces;
- cabbage - 1/2 head;
- Bulgarian pepper - 2 pieces;
- beef ribs - 500 g;
- bay leaves - 2 pcs .;
- potatoes - 2 pieces;
- salt, pepper - to taste.
Preparation
Vegetables sliced and fried together 5-7 minutes. Fill them with 6 glasses of water, put sliced beef ribs, bay leaf, salt and pepper. We extinguish everything on a small fire for 1.5-2 hours.
Recipe for soup with bell pepper
Ingredients:
- Bulgarian pepper - 8 pcs .;
- butter - 2 tbsp. spoons;
- onions - 1 pc .;
- garlic - 2 cloves;
- tomato paste - 2 tbsp. spoons;
- cream - 2 items;
- chicken broth - 6 items;
- starch - 1 tbsp. a spoon;
- salt, pepper - to taste.
Preparation
Peppers are cut and baked in the oven until soft. Onion and garlic, let's pass in butter, add the tomato paste, peppers and fill it with broth. Cook soup for 5 minutes, after which we rub it and fill it with starch diluted with cream. Again, put the soup on the fire, cook until thick, and season it to taste before serving.
