Soft butter is rubbed with sugar, add the beaten egg separately and again break the mixer all together. In a separate container mix sifted wheat flour, soda, cocoa powder (if desired), ground ginger, cinnamon and cloves, and add crushed fresh ginger. We combine the oily-egg mass with the dry mixture and knead the dough. We wrap it with food film and determine for thirty minutes in the refrigerator.

The cooled dough is divided into two parts: one is left in the refrigerator, and the second is placed between two sheets of parchment and rolled out with a rolling pin to obtain a uniform layer thickness of five to seven millimeters. Next, we cut figurines out of the dough, place them on a baking tray and determine in a preheated to 180 degree oven for ten minutes. If you decide to make gingerbread cookies, more than seven millimeters thick, then hold them in the oven for an additional three or four minutes more.

On readiness we give the ginger cakes to cool down and proceed to decorating the glaze.

The recipe for glaze to decorate gingerbread is very simple. To prepare it, we combine egg white with sugar powder, lemon juice and warm boiled water in a bowl, stir first with a fork, and then beat with a mixer for ten minutes. As a result, a dense glossy mixture should be obtained, which after holding a knife on it keeps a trace for ten minutes. If necessary, we can bring the mass to the desired consistency by adding sugar powder or water and whisk again.

Divide the mass into the desired number of parts and add the dyes. Then decorate the gingerbread with a confectionery bag, filling it with the glaze of the desired color. We extrude a small amount of it and form a pattern. If there is a desire to cover the carrot completely, then first draw the rim, and then fill the middle with glaze. If desired, we also decorate confectionery powder products, it will adhere to the glaze very tightly, and improve the appearance of the products. On readiness, we give gingerbread cookies to dry for three or four hours.
