Okroshka on serum

Okroshka is a popular dish among Slavic peoples, although in many cuisines of the world there are cold soups that resemble our okroshka.

It is believed that the authors of the recipe for modern okroshki were burlaks, who were fed dried fish and kvas. To chew the dried fish, they soaked it in kvass. But, in general, it does not matter. It is important that over time, okroshka entered the menu and the peasants, landowners, and nobles. And in the kitchens of wealthy people cooks, written out from abroad and their own, local, were often in charge. So there was a mixture of culinary traditions, there were new recipes.

Okroshka can only be vegetable, meat, fish. You can combine different types of meat: poultry, beef, game. There are recipes with the addition of beans or, for example, shrimps.

Whichever you want to do, there are several general rules. Firstly, the basis of the dish is finely chopped vegetables: potatoes, carrots, turnips, cucumbers. Radish is added at will, since it has a rather sharp taste. Then add vegetables to meat or fish. Meat takes boiled, low-fat, different varieties, mostly cut from the stone. In the modern version, it can be sausage. As for fish, it can be pike perch, sturgeon or cod, add a little lemon juice to the fish soup.

Vegetarians or fasting in okroshka do not put eggs and replace meat with mushrooms. They serve okroshka with kvass , kefir , ayran, meat broth, or beer. We decided to talk about how to cook okroshka on whey.

The recipe for this delicious okroshki does not include radish on the serum, but you can always fix it.

We boil carrots, potatoes and eggs. Clean and cut into cubes. Chop the green onions and sausage. Mix everything, salt, pour serum and pepper if necessary. We serve cold with sour cream and herbs.

Okroshka on whey and kefir

Kefir and whey mix, salt, pepper and add chopped greens and green onions. Let's leave it all up while we cut the vegetables. All ingredients are cut into cubes (radish and cucumbers can be grated). Fill all with yogurt with whey, cool, give the dish a little bit of it.

Okroshka on serum

This recipe for cooking okroshki on the serum is a bit more laborious due to the self-preparation of whey from kefir, but maybe someone will find this option the most acceptable.

Pour into a saucepan 3 liters of kefir and one liter of water and put it on the fire, also set to cook potatoes and eggs. When kefir boils, you need to reduce the heat and, without letting the cap rise, boil, often stirring. When the casserole separates into cottage cheese and whey, let the liquid run off for 2 minutes, then remove from heat.

We cool the pan, then strain the serum through gauze or bandage. Finely chopped boiled vegetables, eggs and sausage. Shinkle the greens, onions. Mix all ingredients and fill with serum. Add mayonnaise and salt, leading to taste. You can put 2-3 tbsp. spoons of cottage cheese, for piquancy. We refrigerate the prepared okroshka in the refrigerator for 2 - 3 hours, then you can serve.
