In any case, quince is chopped on quarters or eighth lobes, sprinkle with lemon juice and lay out compactly in shape (with a good border) either next to the breast, or alternately with pieces of meat. Sprinkle with spices. Bake in the oven for at least 40-60 minutes (duck, goose longer). Periodically sprinkle a mixture of water and wine.
